Difficulty level?

For the most part, it's for a mid-level of sewing ability. The pattern itself has some wonkiness to it -- the way the collar is set up is very strange. I'm an advanced sewer and I had difficulty with it. Also, the way they had you sew the sleeves was very weird (I did it an easier way just because I knew how to do it.) If I had the opportunity to use a different pattern I would. This was not a good pattern.

How many yards of fabric in a XL men’s shirt

I make my husbands a little longer and I usually get 4 yards.

If I have one way fabric graphics do I cut yoke and collar in the same direction of graphic or use the cutting layout in pattern 58” 60”

Cutting the yoke and collar in the same direction of the graphic is ideal. To stabilize the yoke and collar, interfacing will work.

How difficult is this? Hours to completion?

It's more difficult than it should be. The way the collar is set up is very odd and could be handled much better with the addition of one pattern piece. Likewise, the way you do the sleeves is very odd (there is a much easier way to do it.) Overall, depending on your skill, I would say this is a 4-6 hour project from start to finish.
